Dopo anni di esperienza nella ristorazione, la famiglia Billi originaria di Napoli, decide di trasferirsi ad Arezzo, precisamente a Badia al Pino dove inaugura il primo ristorante Vesuvio. Nel 2007 dopo i successi del primo Vesuvio decidono di aprire la seconda sede nel cuore di Arezzo, in poco tempo si fanno conoscere nella piazza aretina e conquistano la fiducia e la qualità dalla città, ad oggi il Vesuvio è una realtà importante nella ristorazione di Arezzo.
Il merito di Giuseppe che ha impostato una squadra vincente con a capo il figlio maggiore Salvatore e da poco anche il fratello minore Domenico. Un amore per la cucina che si tramanda da padre in figli, questa è una delle caratteristiche che hanno fatto diventare il Vesuvio il locale di riferimento per la ristorazione in Arezzo.
