良い食材を良い状態で、良いタイミングでお客様に提供できる様に日々努力しております。
アペゼをオープンキッチンにした理由もその一つです。お客様の目に付く所での調理なのでオール電化のキッチンでクリーンな仕事を心がけております。

お客様の食事の状況を自分の目で確かめながら、どんな表情で食されているのか見ながら料理を作れる事が料理人として一番の幸せです。 そんな中、お客様に驚きや感激を与えられる様に食材や調理法、盛り付けに一ひねり二ひねり加える事を日々考えております。

ディナーではランチとは違った雰囲気でゆったりしていただける様にテーブルセッティングや席間も変えております。御予約で個室をご利用できます（最大8名様） 食材や水にこだわり、ソースはもちろん、デザートやシャーベット・アイスクリームもすべて手作りしてお客様の御来店をお待ちしております。
