Lo spirito di Acquacheta è nato il giorno in cui ho visto il luogo ne lquale sarebbe nato il ristorante. Ho immaginato una cascina di campagna nel centro di Milano.
Cascina perchè il ristorante è stato creato in un giardino e la cucina utilizza i piatti semplici della tradizione campagnola italiana.
Visti i miei trascorsi in Toscana e più precisamente a Montepulciano, ho pensato di fare qualcosa che centrasse con la cultura, lo stile e l'amore di questa straordinaria regione italiana.
La tradizione delle carni, in particolar modo la carne Chianina e tutti quei prodotti del territorio toscano e nazionale.
Il mio intento è quello di avere un luogo di ritrovo non troppo chic, che si avvicini ad un'osteria, dove non è obbligatorio cenare, ma dove sia possibile chiaccherare bevendo del vino e mangiare dei crostini o un tagliere di salumi, magari seduti sulle poltrone o in giardino o nella calda atmosfera interna. Se invece si vuole cenare, lo si può fare con carni selezionate, controllate e certificate sempre nello stile toscano.
