For cake: 1 stick softened butter 1½ cups sugar 2 eggs 2 tbsp. red food coloring 2 tbsp. cocoa 2¼ cups cake flour 1 cup buttermilk 1 tsp. vanilla 1 tsp. baking soda For frosting: ¾ cup butter 1 lb. cream cheese 4 cups confectioners' sugar
Prepare the pans. Preheat oven to 350 degrees F. Grease two 9-inch cake pans and dust them with flour. Set aside.
Mix ingredients. Put the butter and sugar in a large bowl and cream together with a mixer. Add the eggs and mix the creamed mixture together well. Pour the red food coloring and cocoa into a small bowl and mix thoroughly. Add to the bowl of creamed sugar, butter and eggs and mix.
Make the batter. Add half the flour and the buttermilk, using a mixer on low speed to blend together. Pour the other half of the flour into the mixture and blend all of it together. Add the vanilla and then the baking soda. If you want a light and fluffy cake, don't over-beat the mixture.
Bake the cakes. Pour half of the cake batter in each pan. Bake in the oven for about 30 minutes. Take out when done and let cool.
Prepare the frosting. Put the butter and cream cheese in a small bowl and cream. Next, add the confectioner's sugar 1 cup at a time, beating the mixture after the addition of each cup. Beat until the frosting is smooth and fluffy. If the mixture gets too thick, add a teaspoon of milk to the bowl and mix it in. Frost the cakes. To make frosting the cake halves easier, stick both in the freezer and let the cakes chill. Take out of the freezer and frost one of the cakes. Set the second cake on top and frost it.
