"one onion' is a loose measure and apparently my onion was too big (and we LOVE onions at our house). Here are a few tips/things I'll try next time: TIME SAVER: Microwave your sweet potato and then add it to the pot so you don't to wait 20 mins. Worked out great. KID FRIENDLY: Subtract cayenne and mushrooms, add cinnamon and dried cranberries; use 1/2 an onion not a whole MONEY SAVER: Use Craisins instead of dried cranberries Enjoy!
I'm a big fan of quinoa, so tried this recipe. I found it to be bland and boring.
My first experience with quinoa and I wanted to try it because it is suppose to be a "power" food. I was not impressed. It is fairly expensive and is so tiny it's hard to keep track of--measuring, cooking and eating. This recipe did not have much flavor. There are better things out there.
This recipe was ok but it was bland. We added walnuts to try to add more flavor/texture but it didn't improve the taste that much. It is probably a good base for a recipe.
This was an okay salad, but I had higher expectation for it especially since I love quinoa. The sesame-cumin-lime combination was odd, and the whole thing was too acidic for me. On day two I made lettuce wraps of it, and the sweetness of the romaine really helped round out the sharp flavors. I want to try this with something like fresh strawberries added for a touch of sweet and see what that does.
