François Pasteau, chef du restaurant l’Épi Dupin, est un des pionniers de la tendance bistronomique. Crée en 1995, son restaurant est un succès qui ne désemplit jamais, vous n'aurez que peu de chance de diner si vous n'avez pas de réservation. En mai 2012, François Pasteau ouvre l’Épi Malin, un deuxième établissement toujours dans la rue Dupin. Il y propose les plats de l’Épi Dupin à emporter ou à consommer sur place

Après avoir créé un des premiers bistrot gastronomique à Paris, François Pasteau ouvre ainsi un des premiers établissements où la tendance Bistronomique se décline "à emporter".
