Create a counter, then add to, or subtract from, the number on that counter. Long-click on the Minus or Plus Buttons to subtract or add 10 instead of 1. Add counters in several different colors. Have your counters set up the way you want them? Save a profile, and load it later.
Swipe the grey bars across the left and top sides of the screen to set as many rows and columns as you want! Long-press on a counter to open its context menu, then change its color.

Broken? Shows only one counter on a black screen, no counting. :-/

Could really use some manual controls for adding and removing. Swiping on the grey bars is inconsistent. With a few tries it will add or remove a new row or column. Also the default color is the same color as the text so you can't see anything without changing it.
