Chicken salad is any type of salad that has chicken as a chief ingredient among other ingredients that could be added. There are other common ingredients that may include mayonnaise, variety of mustards, hard-boiled egg, pepper, celery, onions and pickles.
In United States, this salad is used to refer to either any salad that has chicken, or a detailed mixed salad that primarily consist of sliced chicken meat and a binder, which could include salad dressing or mayonnaise. Similarly to egg salad and tuna salad, it could be served on top of tomato, lettuce, avocado, or some combination of all or any of these. This salad can also be made for sandwiches. Normally it is made using canned or leftover or chicken. Chicken Salad may also be used to refer to a garden salad that has fried; roasted, or grilled, chicken that is usually cut up and put on top.
In Asia and Europe the salad may be harmonized by a variety of dressings, or certainly no dressing at all, and the salad ingredients can vary from vegetables to traditional leaves and rice, pastas or couscous depending on one’s preference.
The American type of chicken salad was initially served by Town Meats in Wakefield, in 1863 in Rhode Island. The inventive owner, Liam Gray, mixed mayonnaise with his leftover chicken, grapes, and tarragon. The chicken salad recipe became a popular item in the meat market that it was converted to a delicatessen.

Chicken, Carrot, and Cucumber Salad
Ingredients
· 2 cups of chopped and cooked or left over chicken breast which is about 1 pound
· 1 1/4 cups of chopped and seeded cucumber
· 1/2 cup of matchstick sliced carrots
· 1/2 cup of sliced radishes
· 1/3 cup of chopped green onions
· 1/4 cup of light mayonnaise
· Two tablespoons of fresh cilantro sliced
· 1 teaspoon of bottled minced garlic
· 1/4 teaspoon of salt
· 1/4 teaspoon of ground cumin
· 1/8 teaspoon of black pepper
· Four green leaf lettuce fresh leaves
· Four (6 inch) whole grain wheat pitas, each chopped into 8 wedges
Preparation
Mix cucumber, carrots, radishes, green onions, and cooked chicken breast in a large bowl. Mix mayonnaise and fresh cilantro, minced garlic, salt, ground cumin and pepper in a small bowl. Use a whisk to stir. Add mayonnaise mixture to the chicken mixture and stir until it is well mixed.
Divide the mixture equally in four plates. Place one lettuce leaf on each of the four plates and top each leaf with about one cup of the chicken mixture. Place eight pita wedges on each of the serving.
