Easy DIY Lemon Champagne Ice Pops

Elevate the standard ice pop with a little bubbly. These lemon champagne pops are sure to be a crowd pleaser.

Summer entertaining for adults is at its best when you combine the fun of ice pops with lemon, gin and a little champagne. Served in a wide glass with a splash of champagne, they are as tasty as they are elegant.



You will need:

   12 ounces champagne
   3 ounces gin
   3 ounces limoncello
   4 ounces simple syrup
   2 ounces fresh lemon juice
   ice pop mold
   popsicle sticks
   small binder clips (optional)
   lemon wedges
   wide mouth glasses

- Begin by placing all of the liquid ingredients in a pitcher or large measuring cup. Be sure to pour the champagne slowly and against the side of the vessel to reduce the bubbling. Fill each of the reservoirs with the liquid up to about 1/4 inch from the top.

- Place the lid on top of the ice pop mold and insert the sticks. To keep the sticks suspended at consistent heights use small binder clips to stop the sticks leaving about 1-1/2 inches above the lid.

- Place the mold on a small baking sheet or platter and freeze for at least 4 hours before serving.

- To serve, place a pop in a glass with a lemon wedge. Just before serving add a small amount of champagne to the bottom of the glass.
