Easy and Tasty Marshmallow Cupcake

The ingredients :

- For Cupcakes

1. Flour
2. Sugar
3. Baking powder
4. Butter
5. Milk
6. Vanilla extract
7. Egg
8. Melted marshmallow

- For Frosting

1. Icing sugar
2. Butter
3. Milk
4. Vanilla extract
5. Mini marshmallows


-  Making the Cupcakes

Preheat the oven to Gas Mark 3.

Put the flour, sugar, baking powder, and butter into a large bowl and mix well while gradually adding half the milk, mix until all ingredients are combined and you get a smooth consistency.

Whisk together in a separate bowl; Vanilla extract, egg and remaining milk before adding to the original mix and combining all ingredients.

Evenly pour the mixture into 12 paper cases about 2/3 full, bake in a preheated oven for roughly 20-25 minutes until light golden. A knife inserted in the center should come out clean.

Put the medium marshmallows into a heatproof bowl over a pan of simmering water, leave until melted and smooth. When the cupcakes are cool, hollow out a small section in the center of each cupcake and fill with a dollop of melted marshmallow, leave to cool.

- Making The Frosting

Beat icing sugar and butter together in a large bowl.

Combine the milk and vanilla extract in a separate bowl and gradually add to the mixture

Continue mixing until mixture becomes light and fluffy.

Stir in mini-marshmallows.

Spoon the frosting on top of the cupcakes.
