Composée de bistrotier chevronnés, journalistes gastronomiques, photographes avinés et amateurs éclairés, elle honore, une fois par an, un bistrotier qui sert des vins de qualité qu'il est allé lui-même sélectionner dans les vignobles. Il doit savoir faire partager sa passion à ses clients qui seront tous assurés de recevoir un accueil chaleureux.

Chaque lauréat reçoit la Bouteille d'Or et devient le meilleur bistrot à vin de l'année. Il rejoint ensuite le jury de Tradition du Vin pour les élections à venir.
