Caprese salad is a simple Italian salad, made of sliced fresh mozzarella, tomatoes, and sweet basil, seasoned with salt and olive oil. Ingredients

1/4 cup all-purpose flour
1 tablespoon seasoned salt
4 boneless skinless thin-cut chicken breasts
4 tablespoons Crisco® Pure Vegetable Oil
3 cups grape or cherry tomatoes, halved
1 tablespoon minced garlic
3 tablespoons balsamic vinegar
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes
1/2 pound angel hair pasta, cooked and drained
4 (1/8-inch) slices fresh mozzarella cheese
1/4 cup thinly sliced fresh basil



Preparation Directions

STEP ONE
COMBINE flour and seasoned salt in shallow dish. Dredge chicken evenly in flour mixture.

STEP TWO
HEAT 2 tablespoons oil in large skillet over medium heat. Cook chicken 3 to 5 minutes per side or until internal temperature reaches 165°F. Remove from skillet.

STEP THREE
ADD remaining 2 tablespoons oil to skillet. Cook tomatoes, garlic, vinegar, salt, pepper and red pepper flakes over medium heat 2 to 3 minutes until tomatoes are tender. Add pasta. Cook 1 minute or until heated through.

STEP FOUR
PLACE chicken back into skillet with pasta. Arrange cheese over chicken. Cover and remove from heat. Let rest 2 minutes or until cheese is melted. Sprinkle with basil.
